Ingredients

    2 cups cubed potatoes
    2 cups water
    1 cup chopped carrots
    1/2 cup chopped onion
    2 chicken bouillon cubes
    pepper to taste

Directions

Cook potatoes, carrots, onion, and water until tender.
Add bouillon and pepper.
Simmer 10 minutes.

    This was an easy, quick recipe. The potatoes pretty much disintegrate in the soup, which gives it the consistency I was looking for without needing to use a food processor. However, I think two bouillon cubes may have been too much. It kind of overpowered the soup. Will try again with less bouillon. - 11/23/11
