Ingredients

    *Health Choice Smoked Sausage, 1 piece, sliced
    2C Roasted Chicken, light meat, chopped
    2 tbsp veg. oil
    Onions, raw, 1 cup, chopped
    Green Peppers 1 cup, chopped
    Salt, 1 tsp
    Garlic, 1 clove chopped
    1 can diced tomatoes
    1 1/2 c chicken broth*
    1/2 c White Rice, long grain,
    mushrooms, canned,drained
    1 tsp creole seasoning
    1 bay leaf
    parsley
    pepper
    *use homemade broth to cut sodium


Directions

heat oil over med heat in dutch oven.add sausage, peppers, onions, celery garlic,salt.and creole seasoning and pepper.brown veggies and sausage. add chicken,parsley and bay leaves. stir in.add chicken broth, tomatoes and rice. bring to a boil, simmer 20 min. till rice is done. remove bay leaf. serves six. good with garlic bread
