Ingredients

    Carrots, raw, 1 kilo
    Celery, raw, 1 bunch
    Canned Tomatoes, 2 cans
    *Peppers, sweet, red, fresh, 2 large (2-1/4 per lb, approx 3-3/4"
    New Season Frozen Mixed Vegetables (Aldi Australia), 500 gram(s)
    Soup, bouillon cubes and granules, low sodium, dry, 2 teaspoon
    Red Ripe Tomatoes, 4 large whole (3" dia)
    Garlic, 3 cloves
    Water, tap, 4 cups (8 fl oz)
    Bacon, 3 medium rashers

Tips

I don't add extra salt because of the bacon but you could add black pepper, chili or any herbs you like. This soup is good as a lunch dish served with a wholemeal bread roll.


Directions

This couldn't be easier - simply chop the vegetables, crush the garlic, cut the bacon into small pieces and then put all of the ingredients into a large slow cooker and turn it on high and leave it for about 6 hours.
