Ingredients

    1/4 cup FiberOne Original Bran Cereal
    3 tablespoons all-purpose flour
    1/4 cup + 1 tablespoon buttermilk
    1 + 1/2 tablespoon unsweetened applesauce
    1/4 teaspoon vanilla extract
    1/2 teaspoon agave syrup
    1/8 teaspoon baking powder
    1/8 teaspoon baking soda
    1 cup blueberries
    dash salt

Tips

The batter is initially quite thick and will therefore make small waffles that are doughy and chewy in texture. If you like your waffles crispy, you can thin the batter out with water to your desired consistency.
Cooking note: because this recipe is fat free, it will cook quite fast. You may want to use a lower heat setting on your waffle iron, and make sure to monitor the waffles closely as they cook.


Directions

Put FiberOne in plastic bag and crush to powder with rolling pin or other available utensil, or crush in small food processor until fine.
Combine dry ingredients and wet ingredients in two separate bowls. Pour wet ingredients over dry, using fork to mix together. Batter will be thick and slightly lumpy. At this point, fold in half of the blueberries. Reserve the rest for topping.
Preheat waffle iron, spray with vegetable cooking spray. Cook batter in waffle iron in two batches.
