Introduction

Ingredients

    3 medium potatoes, peeled, quartered and thinly sliced
    2 medium zucchini (chappal kuddu) peeled, quartered and sliced
    1 tbsp canola oil
    1 large onion, halved and thinly sliced
    4 cloves garlic, mashed
    1 medium tomato, chopped
    1 tsp ground coriander
    1 tsp salt
    1/2 tsp red pepper
    1/2 tsp curry powder
    1-2 cups water

Tips

Eat with rice, chapati or as a side dish accompanying a main dish.


Directions

Heat oil in a large skillet with a cover. Brown onions and garlic. Add tomato and saute until tender. Add all seasonings and a bit of water. Mix well. Add potatoes first and saute about 2 minutes then add zucchini and about a cup of water. Mix, cover and cook about 10 minutes or until vegetables are soft. If any water left in the pan, cook it off until sauce is thick.

Serving Size: makes 4 1 1/2 cup servings
