Ingredients

    2 lg sweet potatoes or yams, par boiled and quartered
    8 small red potatoes, par boiled
    8 scallions
    3T olive oil
    Dressing
    1/8c. olive oil
    1/8c. chicken broth
    1/4c. apple cider vinegar
    1/8c. balsamic vinegar
    1 tsp honey (up to 1Tbsp if you like it sweeter)
    1/2 Tbsp dijon mustard

    salt and pepper to taste

Tips

I have also made this by roasting the veggies in the oven instead of heating them on the grill. Both ways taste good, but the extra flavor from the grill is better.


Directions

Heat grill. Coat sweet potatoes, potatoes, and scallions lightly with olive oil. Place sweet potatoes and potatoes on the grill until they have grill marks on both sides. About 3-4 minutes for each side. Place scallions on the grill until just browned, happens quickly.
Remove vegetables from the grill and chop to desired piece size. I like mine close to 1" cubes.
Mix remaining ingredients in a small bowl with a wire wisk. Pour over salad, and stir. Salt and peppers. Allow salad to rest for 10 - 15 minutes so the potatoes can soak up the dressing and serve warm.
