My hubby works on Sunday's and it's been really cold here so I came up with this simple soup for my lunch. My hubby works on Sunday's and it's been really cold here so I came up with this simple soup for my lunch.Number of Servings: 1
Ingredients

2 oz Chicken Breast cubed (We pre-cook and cube it then freeze it so it's ready to go whenever.)
1 can low sodium 98% fat free chicken broth
1/4 cup dry lentils
1 tsp chopped dried onion
1/2 TBSP curry powder
1/4 tsp salt
Directions
Bring chicken broth to a boil.
Rinse lentils and sort lentils.
Add lentils, onion, and seasonings to chicken broth.
Simmer on low for about 15 min or until lintils are tender.
Add chicken and enjoy!

This sounds really good and since I love lentil soup and my husband won't eat it, this recipe would be perfect. However.......the amount of sodium listed is well over 1 days worth. Think I would have to find broth much lower in sodium ,or make my own. But sounds like it would be worth the effort. - 5/8/11
