Introduction

Number of Servings: 4

Ingredients

    2 cups cooked chicken-
    4 Tbsp of seasoned rice vinegar
    2 tsps olive oil
    1 Tbsp soy sauce
    1 tsp sesame oil
    2 tsps ground ginger
    1/4 cup thinly sliced scallions
    4 cups shreded red cabbage
    1 large yellow pepper- sliced into thin strips
    1 cucumber-with or without peel-thinly sliced
    1/4 cup slivered almonds- may be toasted
    Juice of 1 lemon or lime
    Pepper and salt to taste

Tips

Using a store bought grilled or rotisserie chicken sames time. You may also add extra vinegar to suit your taste.


Directions

1. Cut cooked chicken into cubes- set aside
2. In a large bowl add: rice vinegar, olive oil, soy sauce, sesame oil, lime juice, and ground ginger- wisk ingredients
3. to same bowl add cabbabe, onions, cucumber, yellow pepper
4. mix thoroughly
5 . add salt and pepper to taste
6. Add chicken and mix
7. sprinkle the slivered almonds
You can also serve the cabbage mixture on individual plates and top with the chicken
