Introduction

Number of Servings: 11

Ingredients

    2.5 cups of cooked chickpeas (or drained if canned)
    4 eggs
    0.5 oat flour (or any GF flour)
    a bunch of parsley, scallions (or any other greens you prefer - I once used rucola)
    1 teaspoon of cumin
    1 teaspoon of coriander
    0.5 onion
    juice of 0.5 lemon
    2 tablespoons of olive oil for cooking

Tips

Cut the patty in half (as you'd do with the burger bun), add a bit of mustard or low fat mayo, salsa or any other sauce, lettuce, veggies, avocado, salmon or even turkey. The choices are unlimited :)


Directions

Cook or rinse and drain your chickpeas. In the food processor blend the chickpeas and the eggs. Chop your parsley, scallions or other greens, onion and mix into the batter. Add the spices, salt and pepper if needed, lemon juice and the flour. Mix everything well. Pour the olive oil (usually one tbsp at a time, as there are gonna be two batches) into the frying pan let it heat up and form the patties and cook them.
