Ingredients

Baking Mixture:
1/2 C Bisquik Mix ( I used Heart Smart)
1/2 C 1% Milk
2 large eggs
Add Ins: (totally customizable)
3/4 lb breakfast sausage (I used a package of turkey smokey links thinly sliced)
1C fresh spinach
about 6 grape tomatoes halfed
1c shredded cojack cheese
Tips
you can add any meats, veggies, cheese combos to suite your tastes. :)
Directions
Mix first three ingredients, set aside
Cook sausage, add spinach, tomatoes cook until spinach is wilted. Top with cheese and let melt
Spray muffin tins with non-stick spray then add 1 tbsp of baking mixture to each muffin cup
Then add a 1/4 of the add ins mixture to each cup
Top with another 1 tbsp of the baking mix
Bake at 375 for about 25-30 minutes
Cool, then freeze or put in fridge
Can be reheated in microwave. When from fridge I nook 2 for about 30 seconds
