We kept this version in single-serving size, but you could easily modify this to feed a crowd. If your own recipe has different ingredients (bread instead of potatoes, sausage or ham in place of bacon, Swiss swapped for Cheddar), go ahead and adjust this recipe accordingly. Ingredients

    1 egg white, beaten
    1 slice bacon, cooked and crumbled
    4 grape tomatoes, quartered
    2 tablespoons shredded low-fat sharp Cheddar
    Pinch black pepper
    Pinch cayenne pepper
    1/2 medium Russet potato, grated (about 1/2 cup)






Tips

You don't need to peel the potato, but since grated potatoes will turn brown quickly, wait until you have all the other ingredients in the bowl before preparing the potato.


Directions


Preheat the oven to 400 degrees, then coat two wells of a muffin tin with cooking spray.
Combine all ingredients in a small bowl, then pour into the prepared pan.
Bake for 20 minutes, remove from the oven, and let the cups rest for a minute. Use a knife to loosen the edges of each cup and serve immediately.


Serving Size: Makes 2 casserole cups, 2 per serving.
