One of my favorite recipes for salmon. I have introduced many friends to salmon with this recipe. It tones down that "fishy" taste that you often get with salmon. Ingredients

    1 1/2 lbs.(approx) Salmon fillets

    2 tbsp Land O Lakes light butter with canola oil
    2 tbsp Grey Poupon Dijon Mustard
    2 tsp Worcestershire Sauce
    1 oz Lemon Juice

    1 c Crispix Cereal - lightly crushed
    or
    1/2 c Rice Chex Cereal and
    1/2 c Corn Chex Cereal - lightly crushed

Tips

serve with dark green vegetable, like Asparagas and brown rice, barley, or sweet potato


Directions

Pre-heat oven to 400
spray flat pan with olive oil spray
lay out fillets on pan

using a heat proof cup, soften butter in microwave and then mix with next 3 ingredients - spread evenly over fillets - spinkle crushed cereal on top - bake for 20 to 25 min. (depending on thickness of fillets)
