Introduction

Tasty and nutritious, this slow cooker recipe will be a family favorite. Tasty and nutritious, this slow cooker recipe will be a family favorite.

Ingredients

    1 tsp oregano
    1/4 tsp black pepper
    2 lbs boneless, skinless chicken breasts (six halves)
    1 tbsp olive oil
    1/4 cup water
    3 tbsp lemon juice
    2 tsp minced garlic
    1 tsp chicken bouillon granules
    1 tsp parsley

Directions

Mix oregano and pepper and sprinkle evenly over chicken pieces.
In a large non-stick skillet, using medium heat, brown chicken evenly on both sides in olive oil.
Mix remaining ingredients and pour over chicken, bringing mixture to a gentle boil.
Pour skillet contents into slow cooker, cover, and cook on low for 6 hours (3 hours on high).
Chicken is very tasty served on a bed of brown rice with steamed carrots!

    Great recipe! In place of water and and chicken bouillion granules I used fat free/ lo sodium chicken broth which lowered the sodium count because I have to watch that for my hubby's blood pressure - it came out great. Thanks!!! - 8/6/08

    I didn't have enough time to let this cook in the slow cooker, so I cooked it in a skillet for 45 minutes on low heat. The chicken came out most and flavorful, and I served it over brown rice with veggies on the side. My family loved it! - 6/10/08

    This was wonderful!! Very easy to make. Instead of the water, I used one can of fat free, low sodium chicken broth. I thought it might need more liquid since I had to keep mine in the slow cooker longer (9 hrs while I was at work). They key is to brown is well before the slow cooker to keep moist. - 6/14/08

    Very good! I used Better than Bullion instead of a cube.Was moist and delicious. I think I might try adding a little c/starch and make a thicker sauce next time. Had plenty of sauce but I didn't measure - just eyeballed it. I also didn't brown it first - just threw threw in frzn breasts for 6 hrs - 3/10/09

    Very simple and tastes great! I loved that it was a recipe that I had all the ingredients for already. I added some broccoli for about 30 minutes at the end, which was great in the sauce! Then I served it over some brown rice, and it made multiple meals! - 1/1/10

    I used thighs instead of breasts and accidently left it on for over the recommended time but I was surprised to find that it not only wasn't burnt, it was so extremely yummy and tender and moist. Perfect. I wish I'd have put in more chicken now, though. - 4/22/08

    the flavor was great but the chicken was a little dry. I used 1 can of low sodium chicken broth and addd a little lemon pepper. Excellent taste. I wonder if browning it more in the pan would have helped it retain moisture? I served it as suggested with brown rice & carrots. - 8/27/08

    Thanks for a great crockpot rec. I've always used lemon, lemon pepper and garlic for grilled chicken (other meats too) and this recipe will be great (with lo fat/lo sodium broth) for winter, rainy or too busy days! Also, try this with lean pork or beef also (use beef broth with the beef). - 2/25/10

    This was so tasty! I didn't cook the chicken beforehand. I just put it in the crockpot raw and let it cook on low for about 9 hours (while I was at work). The chicken was so tender and juicy we didn't even need a knife! It just fell apart! - 2/18/10

    I subbed lemon & herb broth cuz I was out of lemon juice, & added baby carrots w/ 2 hours left.     I made this and took it to Sunday brunch at church and everyone wanted the recipe. I served it over plenty of rice and cut the chicken small so it would go around. low carb eaters just ate the chicken and loved it. - 2/16/08

    We loved this recipe with a few modifications. I added zest and a little more broth. Also, when it was done I added extra lemon juice, zest, and cornstarch to thicken the sauce.     I tossed this in the crockpot with frozen chicken breasts. The chicken was very moist and falling apart. I addedsome cornstarch about half an hour before dinner to thicken up the sauce. We had it with brown rice and broccoli. Next time I will add more garlic, pepper and red pepper flakes - 10/16/12

    I totally cheated! I didn't plan ahead very well and I just threw some frozen chicken breasts and all of the other ingredients into the cooker. It cooked for about 8 hours on low. We used a little of the "sauce" to flavor some whole wheat couscous. Turned out great. Will be making it again! - 2/26/10

    Excellent. Even simpler by just putting frozen chicken into crock pot and sprinkling spices on top. Forgot lemon juice but still good. Used lemon pepper and 1 can of veg. broth +2 green onions. Used 3 tsp. minced garlic. Thickened juice w/ cornstarch. Served on pasta w/ peas mixed in. A+++ - 2/25/10

    Tasty.....butterflied chicken and cooked in chicken broth after searing. Used oregano, garlic, lemon juice, lemon pee, white wine.....took chicken from pan and added some cornstarch to make a gravy. - 1/27/10

    This didn't turn out so well for me. It was VERY Lemony, I served it on top of rice to try and cut the tartness but it didn't work so well. I love that it didn't have a cream soup in it for lower sodium, but if I make this again I will probably use some fat free cream cheese or a laughing cow wedge. - 12/3/09

    I Made this the other night and my husband RAVED over it!
    I increased the broth to about 1 cup, added a little basil to the seasoning mix put on the chicken before browning and used the juice from 1 whole lemon and added baby carrots into the slow cooker to cook with the Chicken. YUMMY !!!!!!

    I thought the chicken was super tender and for the most part, tasty. I think it would have been better if the sauce was thicker and could have been served over/with the chicken. It was a great change to my normal crock pot meals. Oh and I used chicken broth as others did instead. - 3/31/09

    This was okay...I didn't find it to have much flavor, which surprised me, with all the good flavors in it. However, I AM a dork and messed up and used 1-1/4 cups of water rather than just 1/4, so that probably diluted the flavor a bit. On the plus side, my kids LOVED it! - 2/26/09

    I made this yesterday and it came out a little dry and a little bland. I think it may be my fault as I left it in the slow cooker on low for the full 6 hours and it could've came out sooner. Also I used 3 chicken breasts. I really wasn't sure what kind of chicken this recipe called for. - 2/17/09

    I just tucked this in the slow cooker but did make it before and it was tasty. I prefer to use broth rather than bouillon cubes which usually are too salty so used some vegetable broth that was on hand and garlic powder in place of minced garlic which mom doesn't keep on hand. - 6/7/21
