    3 large eggs
    1/8 cup chopped onion
    spray olive oil

Directions

Set skillet on stove and heat on medium high. Turn on broiler to High. Meanwhile, chop an eighth of a cup of onion (about two tablespoons. Spray the skillet with olive oil and add onions. Let cook, stirring occasionally, for two - three minutes. Meanwhile, crack three eggs into a bowl, and mix with a hand blender or electric mixer until very frothy. Pour eggs into skillet and allow to cook for 2-3 minutes, until edges are just beginning to harden. Place the skillet in the oven for 2-3 more minutes, until fritatta has puffed up and browned on top.
