Introduction

Ingredients

    2 14oz cans of diced tomatoes
    1 medium english cucumber
    1/4 C stale bread, torn up, crust removed
    4 T olive oil
    5 cloves garlic (large)
    1-2 T red wine vinegar
    Chipotle powder to taste
    salt & pepper to taste

    Garnishes:
    shredded chicken
    Avocado slices

Tips

you can use less garlic, but I don't see why you would, considering the flavor it imparts. I don't understand you anti-garlic people :(

If you don't have access to chipotle powder, feel free to use a fresh serrano, or just buy a dried/smoked jalapeno, and grind that sucker up to make your own powder.


Directions

1. If your blender cannot handle the full amount work in batches. Otherwise pour the 2 cans of tomatos, 4 T olive oil and the stale bread into the blender and puree.

2. Chop the cucumber into pieces, add with garlic, vinegar, and seasonings. Puree.

3. TASTE. Adjust seasonings as necessary until you feel it has the right flavor. Remember, as you let the gazpacho rest, the flavors will intensify as they begin to meld together.

4. Chill in the fridge for 4 hours, or up to 24. Enjoy with sliced avocado, shredded chicken, or your favorite condiments.
