Introduction

This recipe was adapted (and skinnyfied) from the Living Well recipe. Since the temperature here is well over 100*, I baked this in a toaster oven and it took about 45 minutes. Ingredients

    Custard
    5 large egg whites
    1 large egg
    1/2 cup fat free or skim milk
    1/4 cup white sugar substitute
    1/4 cup brown sugar substitute
    3 teaspoons vanilla extract
    1/4 teaspoon ground cinnamon

    Bread & filling
    2 cups whole-grain bread, cut into 1-inch cubes (about 4-6 slices)
    1/2 cup pitted cherries, fresh or frozen, chopped
    1/4 cup semisweet chocolate chips, preferably mini

Directions

Preheat oven to 375°F. Coat a 1 quart casserole with cooking spray.

To prepare custard: Whisk egg whites, egg and milk in a medium bowl. Add sugar substitute, vanilla and cinnamon: whisk to combine.

Toss bread, cherries and chocolate chips in a large bowl. Add the custard and toss well to coat.

Transfer to the prepared baking dish and push down to compact. Bake until the custard has set, 40 to 45 minutes. Transfer to a wire rack and cool for 15 to 20 minutes before serving.
