Introduction

This is a colorful kale salad. I like using lacinato kale for this one. This is a colorful kale salad. I like using lacinato kale for this one.
Number of Servings: 4

Ingredients

    1 bunch kale, raw, washed, stems cut off, rolled and sliced thinly
    1 cup red cabbage, sliced thinly
    1 cup green cabbage, sliced thinly
    1/2 onion, sliced thinly
    1 med. red or orange bell pepper, sliced thinly
    Dressing:
    1/4 cup olive oil
    1/4 cup balsamic vinegar
    salt, pepper to taste
    parsley or other fresh herbs, if desired

    Slice and toss the veggies in a large bowl. Combine the dressing in a small bowl and toss into the salad. The kale will hold up well in the refrigerator for a few hours.
    You can sprinkle toasted sesame seeds or sunflower kernels on top for an extra crunch if desired.
