Ingredients

    Milk, nonfat, .75 cup
    Corn Oil, .5 cup
    Egg, fresh, 1 large
    Flour, white, 2 cup
    Baking Powder, 3 tsp
    Salt, 1 tsp
    Butter, salted, .25 cup
    Cinnamon, ground, 2 tbsp
    Granulated Sugar, 1.16 cup

Directions

Preheat oven to 400F. Beat milk, oil, egg and 2/3 cup sugar in large bowl. Sift flour, baking powder and salt in smaller bowl, mix gradually into wet ingredients until smooth. Spoon into 12 greased silicone baking cups and bake for 16-20 mins or until tops are lightly golden.

Melt butter in a very small bowl. Mix remaining sugar with cinnamon in an additional small bowl.

Carefully remove muffins from cups, dip tops in melted butter, then into cinnamon-sugar mixture.
