Ingredients

2 tbsp Olive Oil
1 cup of chopped Onion
3 cloves of minced Garlic
1/2 cup, strips or slices, of Carrot
1 cup, pieces or slices, of Mushrooms
40 large Shrimp (tails removed)
2 cans of Tomatoes (2-14oz.)
1 cup of Frozen Green Beans
1 cup of Frozen Yellow Sweet Corn Kernels
8 oz. of Barilla Plus, Penne Pasta
4 dashes of Sea Salt
4 dashes of Black Pepper
1 tsp Cayenne Pepper
4 tbsp of shredded Parmesan Cheese (optional)
Directions
Cook pasta according to directions until Al Dente.
Saute Garlic, Onion, Carrot, and Mushrooms in Olive Oil for 3-5 or until soft. Remove from pan and then add shrimp and season with salt and pepper and cook for 2-3 minutes. Add the Tomatoes, Frozen Green Beans and Frozen Yellow Sweet Corn Kernels and the Garlic/Onion/Carrot & Mushroom mixture back into the pan. Add Cayenne Pepper and Mix well and bring to a bubble (about 5 minutes). Remove from heat. Add Pasta to sauce, mix, and serve.
Top with Parmesan Cheese (optional)
