Ingredients

    4 small chicken thighs
    1 large egg
    1/8 cup of milk 2%
    3/4 cup of Panko bread crumbs

Tips

To brown the bread crumb coating well, broil the chicken in the pan for a few minutes at the end. Recipe can be cut in half to save calories (1 thigh).


Directions

Stir egg and milk together in a bowl. Soak the chicken in the mixture. Pat on bread crumbs on both sides of the chicken. Bake chicken in an oven-proof dish 30-45 minutes - until the chicken internal temperature is 165 degrees.

Serving Size: Makes 2 servings - 2 thighs each
