Introduction

This is a modified version of an on-line recipe. I cut the sugar a bit by using honey which is sweeter-tasting than regular white sugar. Ingredients

    1 cup pumkin puree
    0.75 cup wheat bran
    2 large eggs
    0.33 c molasses
    0.33 c brown sugar
    2 tsp baking powder
    1 tsp baking soda
    1 tsp ground ginger
    1 c. raisins
    6 tbps honey

Tips

p.s. this is much fewer calories than many commercial bran muffins. I was shocked to find out one such muffin I had eaten regularly was 600 calories!!! Of course we have to enjoy in moderation. If you want to add in some heart-healthy omega-3 or 6 then toss in 1/2 cup walnuts.


Directions

Mix the dry ingredients except wheat bran. Mix wet ingredients including eggs. Mix in wheat bran and make sure the mixture is folded in but not too mixed or muffins will be dry. Cook at 400 F for 20-25 minutes.

Serving Size: 1 muffin; makes 12 muffins altogether
