Ingredients

    1 cup water
    1/2 cup quinoa

    1 tbs unsalted butter
    1/2 cup walnuts, chopped

    1 tbs honey
    1/4 cup dried cherries (or other dried fruit)
    1 cup Silk Pure Coconut Milk

Tips

Quinoa is a nutrient-rich seed (NOT A GRAIN) that is high in manganese, magnesium, phosphorus, riboflavin, fiber, folate and copper. As such, is has great anti-inflammatory properties that are good for people with heart problems, joint problems, or migraine headaches.


Directions

Using a microwave rice cooker, cook quinoa in water for 15 minutes.

In a sauce pan, melt butter, then add walnuts. Brown for a couple minutes. Add honey, dried fruit, coconut milk and cooked quinoa. Simmer to thicken.
