    1.5 chicken breasts oven roasted; no skin or bone
    1 diced stalk celery
    1 diced carrot stick
    1-2 tsp tarragon leaves
    .25 cups low fat mayonnaise
    .25 cups yogurt


Great use for left over chicken or some rotisserie chicken purchase at store.


Roast chicken in oven with skin on until juices run clear.
Remove skin and bones and allow chicken to cool.
Dice half to two-thirds of chicken and place remainder in food processor and finely grind.
Add celery, carrots, tarragon, mayonnaise and yogurt.
Mix well.
