Ingredients

    1/4 cup olive oil
    1/2 cup red wine vinegar
    1 tbsp dijon mustard
    1 tbsp (or 3 cloves) garlic, minced
    3/4 tsp salt (or to taste)
    1/2 tsp sugar (or omit)
    1/2 tsp ground black pepper
    1 tbsp italian seasoning
    ______________________________
    1 and 1/2 cups broccoli florets
    1 and 1/2 cups cauliflower florets
    3 carrots, peeled and chopped
    2 zucchini (medium size) chopped
    1 pint container cherry tomatoes or grape tomatoes
    1 cup cherry peppers, halved and seeded (or use 12)
    1 small red onion, thinly sliced

Tips

You can add summer squash to this recipe as well. Enjoy!


Directions

Whisk together first set of ingredients in a small bowl. Put veggies in a large tupperware container. Pour the dressing over the veggies. Toss, then refrigerate. Toss veggies every so often. Wait at least 2 hours to eat this, tastes even better the next day. Top with grated parmesan cheese if desired, but remember to count those calories too!
