Introduction

Quick and easy to make sauce. The recipe says to use regular canned tomatoes but I prefer the Fire Roasted diced to go with the can of crushed. Use fresh basil at the end when available. Ingredients

    1Lg. Can of diced tomatoes
    1Lg. Can of crushed tomatoes
    1Lg. onion, Vidallia or other sweet onion
    3 Cloves of minced garlic
    2 tbsp of dried basil or 5 fresh leaves roughly chopped
    1 tbsp olive oil
    1tsp salt or to taste
    1tsp. black pepper or crushed red pepper flakes for heat

Tips

If using fresh basil instead of dried, add at the last minute to finish the sauce. For a thicker sauce you can cook at a lower temp for a longer time. This will reduce the sauce and concentrate the flavors. Also I like to substitute crushed red pepper flakes for black pepper to give the sauce some zing.


Directions

Heat olive oil in pan over med high heat. Add one whole diced onion and saute until soft. Cook 2-3 minutes. Mince garlic cloves and add to onions. Cook one minute. Add both cans of tomatoes with salt, pepper, and dried basil to taste. Turn down heat to med-med low and let cook for 25 minutes.

Serving Size: Makes 4 cups of sauce
