Ingredients

    Red Curry Sauce (1 packet)
    Carrots (1 medium)
    Peanut Butter (2/3 cup)
    Chicken or Vegetable Broth (2/3 cup)
    Cilantro (to taste)
    Tofu (1 package)
    Scallion (4-5 chopped)
    Spaghetti Noodles

Tips

Leave sit in the fridge over night for a better flavor combination. Great with side of fresh fruit!


Directions

Cook noodles, and chill.

Combine curry paste, cilantro, peanut butter, and broth in food processor.

Fry tofu in a pan until browned and cooked.

When noodles are cooled, combine sauce with them.
Add carrots and any other vegetables you want to the mixture raw. Serve topped with tofu. Salt to taste.
