Introduction
This is the recipe of ingredients I had on hand today. I make braised greens a lot because I get them in my food share box, and my husband will eat them prepared this way! Use any mix of sturdy greens, any fat, any braising liquid you want - but of course nutrition will change too. This is the recipe of ingredients I had on hand today. Ingredients
-
Olive oil - 2 Tablespoons
Onion - 1 large sliced lengthwise
Garlic - 3 cloves, minced or to taste
Beet greens - amount from a bunch of beets
Collard greens - amount from one bunch
Apple cider - 3/4 cup (more or less)
Salt and pepper to taste
Tips
Normally, I would not cook beet greens so long, but I had them mixed with collards today, so they did fine. But, this long cooking recipe is best with collards or kale. Shorter cooking times for beet or turnip greens.
Directions
Saute onions and garlic in olive oil in a heavy dutch oven. When translucent, add the greens, then the liquid. Cook on stove top just below a simmer for at least 60 minutes or put in a 300 oven. Greens are done when very tender.
