Ingredients

5 eggs, scrambled
1 large onion, chopped
1 pkg frozen, cut-leaf spinach
3 cups shredded muenster cheese (or cheese of your choice)
3 tbsp butter
salt and pepper to taste
Olive or cooking oil, spray type
Directions
Preheat oven to 350 degrees Fahrenheit
1. Spray a 9-inch pie dish with oil.
2. Thaw spinach and drain most of liquid, shred cheese, chop onion.
3. In a medium skillet, melt butter. Add chopped onion and cook until translucent.
4. Stir spinach in with onion and simmer on low until most of liquid is gone
5. In medium bowl, scramble eggs with salt and pepper.
6. Add cheese in with egg.
7. Add spinach/onion mixture in with egg and cheese. Stir until thoroughly mixed.
8. Pour into oiled pie dish and bake at 350F for 30 minutes.
