Number of Servings: 6

Ingredients

    8 cups beef broth
    1 tbsp. honey
    1 tbsp soy sauce
    2 tsp grated ginger
    2 cups mushrooms
    3/4 lb. beef tenderloin
    4 packets udon noodles (4 cups)
    fresh chili or chili flakes

Directions

bring beef stock to boill,then reduce to simmer
add everthing but the beef, mushrooms and noodles
simmer 10 minutes
add your very thinly sliced beef tenderloin
add mushrooms
simmer 5 minutes
remove from heat top with green onions or sliced leeks

Serving Size: 6 large bowls
