Number of Servings: 20

Ingredients

    1-1/2 cups unsweetened shredded coconut
    3 egg whites
    1/4 tsp vanilla extract
    Dash of salt
    1 tbsp honey
    1 tsp stevia
    the fibre from 1/4 cup unsweetened applesauce
    1/2 to 1 tsp of cinnamon (to taste)

Tips

Replacing sugar with stevia takes some of the structure away. To add structure back into meringues, add apple fibre. Simply drain 1/4 cup of unsweetened applesauce using cheesecloth in the fridge overnight. The juice drains away most of the calories and leaves mostly fibre. Use the juice later as the base for a fruit salad.


Directions

Beat egg whites and dash of salt until soft peaks form. Gradually add in honey and stevia while beating until peaks are stiff and glossy.
Fold in coconut.
Drop by rounded teaspoon onto greased baking sheet.
Bake at 325*F 18-20 minutes until set and very slightly browned.
Center will still be soft.
