Ingredients
-
1 egg
1 egg white
4 slices thinly sliced ham (I used oscar meyer), chopped
1 slice of turkey bacon, cooked and chopped
2 Tbsp of green peppers (chopped)
2 Tbsp of red peppers (chopped)
2 Tbsp of broccoli (chopped)
1/2 Tbsp of onion (chopped)
salt and pepper to taste
Directions
Mix eggs in a bowl, and in a seperate bowl mix all the veggies together (feel free to change up the veggies to whatever you have on hand).
In a small skillet over medium heat spray Pam in the bottom. Next add eggs. Then add your veggies (if you want less veggies, don't add all), then top with the chopped ham and bacon. DON'T STIR!
Check the bottom of the frittata. When the bottom is just brown transfer the whole skillet to oven at about 200ish (Use a low heat to prevent the eggs from getting rubbery). When the top is fully cooked (about 5min) take out and put on a plate.
If desired you can add cheese or salsa (I like hot sauce!). Enjoy!
