Ingredients

    2 1/4 cup Oatmeal
    1/2 tsp salt
    2 tsp baking powder
    2 tsp cinnamon
    .5 tsp nutmeg
    2 large egg whits
    1/2 cup applesauce
    8 tsp splenda
    3/4 cup milk
    1/4 Raisins

Tips

I used 1% milk but skim will work.
Add 1/2 cup chopped walnuts
If you make the muffins a bit smaller, you can get 12 out of this recipe but we like them a little bigger.


Directions

Preheat oven to 350. Spray muffin pan with non-stick cooking spray.

Mix Oatmeal with salt, baking powder, cinnamon and nutmeg. Add remaining ingredients. Mix well.

Fill each muffin cup 3/4 full.

Bake for 15 to 20 minutes.

Serving Size: 1 muffin
