Ingredients

Kirkland Signature Sirloin Burger 1/3 pound, 1 patty
5 medium mushrooms, sliced
1 cup Fresh Spinach
1/2 Yellow Summer Squash, sliced
1/2 Zucchini, sliced
1 can Hunt's So Salt Added diced tomatoes 1/2 cup
1/4 chopped Green Onion
2 T minced garlic
1 cup Archer Farms Whole Grain Medley cup, 3 serving
1 teaspoons Lemon Juice
3 T Balsamic Vinegar, 3 tbsp (remove)
1/4 cup Parmesan Cheese, grated
1 T Basil (freeze dried)
2 T Olive Oil
Directions
Prepare Whole Grain Medley as package instructs. While this is cooking, slice up veggies and get everything else ready.
Heat skillet with olive oil in pan. Add in all sliced vegetables including garlic, stir-fry until zucchini lightly browned. Remove veggies from skillet.
Add sirloin patty to skillet, add 1/4 c water. balsamic vinegar, lemon juice, basil and can of diced tomatoes and lower heat to medium high heat. Cook until patty starts to crumble, break apart patty into chunks, stirring frequently, about 5 mins. Add veggies back in and spinach, cook an additional 3 minutes at medium-low heat. Serve over Whole Grain Medley.
