Ingredients

6oz (225 gms) red Lentils
1 x medium Leek
1 x medium onion
1 x bell pepper (green or red)
2 x garlic glove (adjust for taste)
1 tbsp dried parsley
2 tsp vegetable boullion
1 1/2 pints of water
Tips
If the lentils are not soaked overnight the cooking time will be increased. Make sure the lentils are soft and cooked thoroughly before adding the other ingredients.
Directions
Rinse and soak the lentils overnight with plenty of cold water. Boil in half the water until soft. Add all the other ingredients apart from the boullion and cook through for 10-15 minutes. Add the boullion according to taste. Blend and serve.
