Panera Bread Braided Challah, 4 - 6 slices, cubed
(# of slices depends on how large the challah bread is)
Best Foods Regular Mayonnaise, 8 tbsp
0% Greek Style Nonfat Yogurt, Plain, Trader Joe's, 1 cup
Cottage Cheese--Albertsons Lowfat 1.5%, 0.5 cup
Sour Cream, reduced fat, .5 cup
Granulated Sugar, .25 cup
Honey, 1 tbsp
Grapes, .5 cup, seedless cut in halves
Sweet Cherries, 1 cup, with pits, yields pitted
Almonds, .25 cup, sliced
Tips
Use a square pan (8x8 or 9x9). Spray the pan with Pam.
The bread pudding is sweet, but can be served with sugar or pancake syrup, or a homemade fruit sauce.
Directions
Mix eggs, mayonnaise, yogurt, sour cream, sugar, honey grapes and cherries together. Add bread cubes and combine until bread is moistened. Pour out into prepared pan, smooth it into the corners of the pan.Sprinkle with sliced almonds.
Bake at 350 for 25 minutes. Check at 15 minutes, cook it 5-10 minutes more. Watch that the almods toast but don't burn. Let sit in the pan for a couple of minutes, cut and serve.
Serving Size: makes six servings (can be cut into 8 to accompany brunch)
