Introduction

This recipe has evolved over the years. The original started from a recipe inspiring me on the internet, but over the years I have adapted it to be healthier version. I've moved from tri-colored pasta to whole wheat pasta and eventually gluten-free pasta. I've tried fat-free Italian and Caesar and found that full-fat Caesar please the crowd better than fat-free Caesar. This recipe has evolved over the years. Ingredients

    1 bell pepper (red or green)
    1 Bermuda onion
    1 12oz box pasta of choice (I prefer gluten-free or whole wheat)
    1 bottle (16 oz) fat-free Italian dressing
    1 bottle (16 oz) Newman's Own Creamy Caesar Dressing
    1 bag Parmesan cheese

Tips

This is always a popular item to take to any potluck function. This is a recipe for those persons whose bodies do not process unrefined carbs well (affecting their energy levels) and whose food limitations affect what they eat at parties. If I bring this to a potluck, I know there is a pasta option I can eat without a carb-crash or blood-sugar spike. It is high in fat, so this is not a frequent dish I make, but a compromise I use for when eating at parties with others.


Directions

Boil water for pasta. As you wait for water to boil, cut into bite size pieces the bell pepper and onion.

Cook pasta.

When pasta is cooked, drain and combine cut bell pepper and onion, Italian and Caesar dressing, and bag of Parmesan cheese.

Place in bowl or casserole dish, cover and set in fridge until cool (a few hours).

Serving Size: about 20 servings (serving spoon size)
