Ingredients

Vinaigrette:
1.5 Tbsp olive oil
1 tsp red wine vinegar
1 tsp balsamic vinegar
Salad:
3 roasted beets, sliced
beet greens from the beets, cleaned & spun mostly-dry
1 shallot
1/2 Tbsp olive oil
1 oz goat cheese
1/4 c toasted walnuts
salt & pepper
Tips
Golden beets are wonderful here!
Directions
Roast beets in 425 F oven for 60-90 minutes.
Saute damp beet greens & shallots in olive oil until greens are wilted. Plate.
Make vinaigrette.
Remove beet skins, slice beets & put onto greens. Dress. Top with crumbled goat cheese & walnuts.
Serving Size: Makes 4 servings (1/2 c)
