Ingredients

1 cup self rising flour
1/4 cup egg beater
1 teaspoon salt
6 tablespoons of water
Directions
In a large bowl make a well in the center of the flour. Add 1/4 cup of Egg Beaters or 1 slightly beaten egg.
Mix with hand in a circular motion while incorporating the water 1 tablespoon at a time just until it forms a dough.
Knead the pasta dough on a floured surface
until smooth and elastic - cover and allow
the dough to rest for about 10 minutes.
Divide dough in half and roll each out
into a paper-thin rectangle.
*At this point the pasta dough can be cut
and shaped into various shapes.
To make basic egg noodle type pasta,
Roll dough around the rolling pin.
Carefully slip the rolling pin out.
Cut dough crosswise into 1/8 inch strips
or ¼ inch strips for wide noodles.
shake out each strip, place on towel or hang
to dry for about two hours.
Cook in approximately 3.5 quarts of boiling
salted water for 12-15 minutes. Cooking
time will depend on the dryness of the pasta,
*Fresh pasta takes approximately 4 minutes
to cook.
