Ingredients

    1 marrow, sliced lengthwise and seeds discarded.
    1 large onion, chopped finely
    3 cloves garlic, crushed
    6 slices bread, crumbed
    250g grated low fat cheddar cheese
    salt and pepper to taste
    2 large eggs, lightly beaten
    2 tablespoons canola (rapeseed) oil

Tips

If you prefer zucchini (courgettes) can be used, or the mixture can be cooked in a pastry case.

Directions

Score the marrow flesh in both directions with a knife then remove it using a spoon, leaving the skin intact. Chop the flesh into 1cm cubes, roughly.
Stir the marrow flesh, breadcrumbs and cheese together with crushed garlic, salt and pepper until well mixed.
Beat raw eggs and oil together lightly then add to the marrow mixture and combine thoroughly.
Fill the marrow skins with the mixture.
Bake for approximately 45 minutes in the center of an oven at Fan 180 C, 200C, or 375F until golden brown and cheese is melted.
