Ingredients

3-4 (depending on size) Red Potatoes or your preference
1/2 cup Skim Milk
1/2 cup Light Sour Cream
2 cups Part-Skim Mozzarella Cheese shredded
1 tbsp Light Mayo (I like Blue Plate)
1 tbsp flour (optional)
3 cloves garlic minced
3 tbsp shallots minced (optional)
salt & pepper to taste
Directions
Preheat oven to 400 degrees.
Spray dish with non stick cooking spray.
Slice potatoes, then cut slices into fourths.
In a separate bowl, whisk together sour cream, milk, mayo, flour, minced garlic, salt, and freshly ground black pepper.
Add the potatoes in the mixture and stir. Then pour the contents into the pan.
Cover with foil and bake for 30 minutes. Remove foil and add grated cheese to the top of the potatoes and bake for 20 minutes, until cheese is melted, bubbly and golden.
Serving Size: makes 6 1-cup servings
