Ingredients

    Ingredients:

    2 Cups White Whole-Wheat Flour
    1 tsp Baking Powder
    1 tsp Baking Soda
    1/4 tsp salt
    1 TBSP Cinnamon
    1/4 cup Unsalted Butter (Room Temp)
    1/4 cup Unsweetened Applesauce
    3/4 cup Raw Honey
    2 tsp Raw Sugar
    1 Large Egg
    1 cup Greek Yogurt (Or Buttermilk)
    2 Large or 1 Large & 2 Small Apples (Finely Chopped)

Directions

1.) Preheat oven to 450.
2.) Lightly spray pam spray on muffin tins/liners.
3.) Whisk together flour, baking powder, baking soda, salt, and cinnamon in large bowl.
4.) Toss in chopped apples and toss to coat.
5.) In seperate bowl cream together butter and honey until light and fluffy.
6.) Stir in slightly beaten egg, applesauce, and yogurt.
7.) Gently fold wet ingredients into the dry.
8.) Spoon into muffin tins or liners (I fill up to the top).
9.) Sprinkle with the 2 tsp of raw sugar for added crunch.
10.) Bake at 450 for 10 minutes or until slightly browned. Reduce temp to 400 and continue to bake 5-10 more minutes until toothpick comes out clean.

Serving Size: Makes 18 Standard Sized or 36 Mini Muffins
