Ingredients

    8 slices Italian bread/ cubed (Preferably, stale)
    1 roll/slice Arnold Potato Bread/cubed
    2 1/2 Cups Silk Unsweetened Soy Milk (30 calorie blend)
    2 Large eggs
    1 Tsp. Vanilla Extract
    1 Tblsp. Splenda
    2 Tblsp. Splenda Brown Sugar Blend
    10 (1/2 oz.) pecan half’s (cut-up)
    Dash of Sea Salt

Tips

Using soy milk tends to make cooking time a little longer than usual due to lack of fat in milk.


Directions

Heat oven to (Bake) 350. Cube bread, set aside. In separate bowl blend all other ingredients with wire whisk. Add bread to liquid and toss until all bread is thoroughly saturated. Bake in preheated 350 oven on middle rack for 50-60 mins. or until knife comes out clean when inserted into middle of bread pudding (top of bread should be slightly browned). Remove from oven, cool for 10-15 mins., serve warm with 2 Tblsp. whipped topping (sugar free), if desired or serve cold, delicious either way.
