Ingredients

    1/3 Cup Red Win Vinegar
    1/3 Cup Olive Oil
    1/3 Cup Red Cooking Wine
    1 Onion thinly sliced
    2 TSP sugar (white or brown)
    2 Cloves Garlic
    1 Red Bell Pepper thinly sliced
    1 Yellow Bell Pepper thinly sliced
    1 lb mushrooms small or quarter large ones
    1 Can Artichoke Hearts in water (or frozen)

Directions

In a medium saucepan, mix red wine vinegar, olive oil, onion, brown sugar and garlic. Bring to a boil. Reduce heat. Stir in mushrooms. Simmer 10 to 12 minutes, stirring occasionally. Add peppers and simmer for 5 minutes Transfer to sterile containers and chill in the refrigerator until serving
