Introduction

Ingredients

Filling
5 ripe firm peaches
4 cups berry of choice (marionberries)
juice & zest of 1/2 lemon
1/3 cup honey
3 TBSP whole wheat flour
2 tsp pure vanilla extract
pinch salt
Topping
3 1/2 cups rolled oats
1 cup white whole wheat flour
1/4 tsp salt
1/2 tsp ground cinnamon
1/2 cup cold butter
1/2 cup pure maple syrup
Directions
1.) Preheat oven to 350.
2.) Lightly spray 13 x 9 baking pan with Pam spray.
3.) Cut the peaches and place along bottom of pan, along with the 4 cups berries of choice. I used Marionberries.
4.) Sprinkle flour, honey, lemon juice, lemon zest, salt and vanilla over the top of the fruit and stir to combine.
5.) Let fruit sit for 10 minutes while your preparing topping so that it starts to thicken.
6.) Combine oats, remaining flour, salt, and cinnamon in mixing bowl, combine well.
7.) Cut cold butter into little chunks and mix in with pastry cutter or crumble with fingers.
8.) Pour maple syrup over the top and stir to combine.
9.) Layer topping over fruit and cover with foil.
10.) Bake for 30 minutes, remove foil and bake an additional 20-25 until topping is golden and fruit is bubbling.
