Introduction

This was inspired by something a chef at a local culinary school whipped up for me when he ran out the soup of the day. I'm not sure everything he put in his, but this is pretty darn close... and yummy!!! Ingredients

    2 Cans of Tomato Soup** (as directed with 1 can of water each)
    1 Cup of Cooked spinach (about a can -drained)
    12 Large Shrimp
    1 Clove of garlice chopped
    3 tsp Sriracha Sauce
    1 tbsp olive oil

    **select a low sodium version

Directions

Bring the cans of soup to a slow boil
Just before it starts to boil add the 1/2 garlic and spinach
reduce heat and cover
in a small fry pan saute remaining garlic, oil, and shrimp for for about 3 minutes
Tranfer saute to soup
Bring to a boil for 2 minutes
Turn off and serve

Serving Size: 2 large bowls
