Ingredients

    1 large onion
    1 clove garlic
    2 cans 15oz tomato sauce
    1 tbls oregano
    2 small eggplants or 1 large
    4 cups mozzarella cheese
    1/2 cup parmesan cheese

Directions

chop onion and garlic, stir with small amt of olive oil over medium heat for 5 minutes. Add tomato sauce and simmer for 20 minutes. Flour and egg each slice of eggplant, spray with Pam. Bake for 20-25 minutes on 450. Layer small amt of sauce in bottom of 9x11 baking dish/ Layer eggplant, cover with another layer of sauce, mozarella cheese and parmesan cheese. Bake on 350 for 30 minutes.
