Ingredients

    1 pkg. shredded cole slaw mix (16 oz.)
    1/2 c. light mayo
    1/2 c. green onion, chopped
    2 tbsp. dill pickle juice, from jar
    2 tbsp. cider vinegar
    2 tbsp. granulated sugar
    1/2 tsp. coarse salt
    dash fresh ground black pepper

Tips

This recipe can make a hearty side dish by adding sunflower seeds and raisins, or even a meal by adding cold diced chicken.


Directions

1.) In a medium bowl, whisk together light mayo, dill pickle juice, and cider vinegar.
2.) Add cole slaw mix and green onion to the combined indgredients and toss.
3.) Add sugar, salt, and pepper to taste.

Serving Size: Makes enough for 6 regular sandwiches or 12 sliders.
