Ingredients

    1 lb. Extra lean ground beef
    1 1/4 c. low sodium salsa
    3/4 c. quick cooking oatmeal
    1 carrot, shredded
    2 cherry tomatoes, diced
    1/2 c. coarsely chopped Mushrooms

Directions

Preheat the oven to 350. Spray a loaf pan with nonstick cooking spray. In a large bowl combine the beef, salda, oarmeal, carrot, tomatoes and mushrooms. Shape the mixture into a loaf. Place the loaf in the pan. Bake until browned and a knife inserted in the center comes out clean and hot, about 1 hour. Let stand 10 minutes before slicing.
