Introduction

Ingredients

    The Salad:

    2-3 Cups Romaine Lettuce
    Alfalfa Sprouts - about 1/4 cup
    Fat Free Feta Cheese, Crumbled
    1 Large Scallion, chopped
    About half of a medium Cucumber, cut however you like.
    4 Olives (I use 2 large black & 2 large green) pitted & sliced.
    2-3 Cherry Tomatoes, halved.


    The Dressing:

    Kalamata Hummus - Cava Mezze brand (you can find it at Whole Foods)
    1 tsp. Extra Virgin Olive Oil
    Juice from one wedge of Lemon (about a tbsp)
    Black Pepper, to taste.


Tips

If you can't find the Kalamata Olive Hummus, you can use regular hummus, just add one or two crushed olives to it.


Directions

Mix all the ingredients in the dressing and set aside.
Mix all the ingredients in the salad, add the dressing.

I usually make my salads in a tupperware container, to get a good serving side and plus you can snap the lid on and shake it up to encorporate the dressing!
