Ingredients

    1 lb lean beef
    1.5 cup of onions
    1 tsp of diced garlic
    1 can of chicken broth
    4 cups of water
    1/2 can of rotel chopped tomatoes and green chilis
    3 cans of tomato sauce
    1 can of string beans
    1/2 can of dark red kidney beans
    4 large potatoes peeled and cut into pieces
    1-2 servings of angel hair pasta.
    season to taste.

Tips

if you omit the potatoes and pasta when preparing, this recipe is great to be portioned out and frozen. Then when defrosted, just bake a small potato and a small amount of pasta and you have a great lo cal/fat meal.


Directions

Cut beef into pieces, season to taste. brown beef. Peel and chop potatoes into large bite sized pieces. place all ingredients to crock pot then add 4 cups of water. Cook on high for 6 hours or low for 10 to 12 hours. Season throughout cooking time to taste. I like Tony Chachere seasoning, serve with a very small amount of cooked pasta.
